The spread of the cacao tree began with colonialism, when explorer Christopher Columbus, who had taken a sample of the beans back with him to Europe, first encountered it. Another explorer, Hernando Cortez, reignited the interest in the cacao bean by taking three full chests of the bitter beans back to Spain where he presented them as a gift to the monarchy. The first official shipment of chocolate was made in 1585 to Seville.
Sugar is Introduced
Once in Spain, chocolate soon found its way into the rest of Europe where sugar was introduced into the mix. At first, the chocolate drink was too expensive and was reserved solely for royalty and nobility. It was in England where chocolate began to be more widely available to the general populace. By the 17th century, chocolate houses were serving cups of hot chocolate to their paying customers.

In 1828, an inexpensive method for pressing the fat from cacao beans, known as cocoa butter, was discovered via a hydraulic press. Soon after, the discovery had been made that the re-addition of the cocoa butter back into the cocoa powder enabled shapes to be created, which led to the first chocolate bar.
